Choc Tahini Energy Bars

This recipe idea for these delicious and nutritious choc tahini energy bars is straight from Jessica Sepel's book Living The Healthy Life.

These easy to make energy bars are packed full of flavour and give you that instant pick-me-up. They're perfect for a mid-morning or late afternoon snack on the run, and they're also toddler approved #winning.

 

Choc Tahini Energy Bars

Ingredients

  • 10 Medjool dates pitted and roughly chopped
  • 1 1/4 cups of organic oats
  • 1/2 cup of LSA
  •  2 Tbsp of sesame seeds
  • 3 Tbsp of raw cacao powder
  • 1/4 tsp of sea salt
  • 1/3 cup of hulled tahini
  • 1/3 cup of coconut oil melted
  • 2 Tbsp of maple syrup

Instructions

Place all ingredients in a food processor and pulse until well combined - the mixture should be firm but soft.

Grease and line a 20 cm square baking tin and press the mixture in evenly with the back of a spoon.

Cover and freeze for 40-50 minutes or until firm.

Remove from the freezer and cut into 10 bars. Store in an airtight container in the fridge for up to a week.
